No matter what day of the year, a nice juicy burger is always satisfying. The hearty taste of these lamb burgers topped with the tangy punch of creamy goat gouda is the new and different you’ve been looking for. Fresh oregano, dried mint, and splashes of lemon juice are the perfect additions that add extra pizzazz to this recipe.

Serves 2

1 1/2 pounds ground lamb (shoulder meat)

1 large shallot, minced (1/4 cup)

2 tsp fresh oregano

1/4 tsp dried mint

1 1/2 tsp ground cumin

1 tsp kosher salt

1/2 tsp sweet Hungarian paprika

Freshly ground black pepper

2 tsp fresh lemon Juice

6 ounces Hollandse Chèvre, thinly sliced

2 large leaves romaine lettuce, torn in half

1 tomato, cut into 4 slices

2 oblong or round pita breads, cut in half

1) Prepare grill by applying oil to the grate in order to prevent sticking. Turn grill on to medium-high heat.

2) Combine the ground lamb, shallot, herbs, spices and lemon juice in a mixing bowl, mix thoroughly. Divide the mixture into four equal portions and form 1 inch thick patties.

3) Grill for 5 to 6 minutes, until nicely seared on the bottom. Turn and grill the second sides for 5 minutes or until the burgers are almost cooked through. Lay 2-3 slices of Hollandse Chèvre on top of each burger. Cook just until the cheese has melted.

4) Tuck lettuce and a tomato slice in each of the pita halves, then add a burger with the melted cheese to each one. Serve immediately.

You can choose your favorite hamburger buns if you prefer. Top your burger classic favorites: roasted red peppers, sautéed onions, bacon, or even sour garlic pickles. It’s your creation, enjoy!
