Scalloped Potatoes with Fennel
Time to reinvent your traditional scalloped potato dish! By adding fennel, you are giving your dish a slightly sweet flavor and by adding Uniekaas Reserve® you give your dish that perfect amount of bite! It’s the perfect savory dish for any occasion!
1 cup whipping cream
1 cup half and half
1 medium fennel bulb trimmed, halved and thinly sliced
2 lbs peeled Russet potatoes, thinly sliced
Salt and pepper to taste
2 cups Uniekaas Reserve Cheese, shredded
1 sprig of fresh parsley
1)Preheat oven to 400°F. Generously butter a glass baking dish.
2)Combine whipping cream, half and half, and fennel bulb trimmed in deep skillet or pot. Then add sliced potatoes. Bring mixture to a boil over high heat, stirring frequently. Boil 5 minutes. Season generously with salt and pepper.
4)Transfer half of potato mixture to prepared baking dish. Sprinkle half of the UnieKaas Reserve cheese on top. Add remaining potato mixture. Firmly press the mixture down and sprinkle more Uniekaas Reserve over top.
5)Cover dish tightly with foil and bake for about 40 minutes, until potatoes are tender.
6)Uncover and bake until top is golden brown, about 10 minutes.
7)Let stand 10 minutes before serving. Garnish with fresh parsley.
